Smoked Salmon, Avocado, and Fennel Salad

This smoked salmon, avocado, and fennel salad, dressed in a delicious creamy dill sauce is the perfect choice for a lunch or dinner main meal on those warmer days!

Here’s what you’ll need:

For the Creamy Dill dressing:

⅓ cup mayo

1/3 cup sour cream

1 tablespoon olive oil

2 tablespoons lemon juice

2 garlic cloves, finely minced

1/3 cup fresh dill, chopped

1/4 teaspoon salt

1/4 teaspoon fresh cracked pepper

For the salad:

1 head butter lettuce, leaves torn

1 Turkish cucumber, sliced

1/2 a fennel bulb, thinly sliced

4 - 6 ounces smoked salmon

⅛ –1/4 cup thinly sliced red onion

2 tablespoons capers

1 avocado, sliced

Sunflower sprouts, more dill (optional)

Here’s what you need to do:

For the dressing:

● Place all ingredients, except the dill, in a bowl and whisk until smooth.

● Once smoothly whisked, add the dill and set aside.

Storing instructions: Leftovers are best kept in the fridge.

For the salad:

● Place the lettuce, fennel bulb, cucumbers, smoked salmon, red onions, and capers in a big salad bowl and toss.

● Add in some of the creamy dill dressing (enough to coat your salad) and toss gently.

● Add salt and pepper to taste.

● Toss in avocado or use it as garnish.
