Skinny Alfredo

We all love a deliciously creamy pasta!

This quick and easy Skinny Alfredo pasta is a great alternative to satisfy those pasta cravings while trying to stick to a healthy diet.

Here’s what you’ll need:

● Whole wheat linguine, about 12 oz.

● 1 tablespoon of extra virgin olive oil

● 3 cloves of minced garlic

● 2 tablespoons of flour

● 1 cup of low sodium chicken broth

● ¾ cups of 1% milk

● ½ cup grated parmesan

● 2 tablespoons of plain Greek yogurt. (Optional. This is to replace the full cream creamy pasta sauce)

● Freshly ground black pepper

● Crushed red pepper flakes

● Freshly chopped parsley

Here’s what you have to do:

● Cook the linguine until soft in a large pot of salted, boiling water. Keep ½ cup of pasta water aside and then drain the pasta.

● Over medium heat, cook garlic in heated oil for 1 minute. Gradually sprinkle the flour, stir and cook until lightly golden.

● Gradually add chicken broth while whisking until mixture is smooth before adding more broth. Bring this mixture to a boil then gradually add in milk while whisking. Bring this mixture to a simmer and cook until the sauce is thickened.

● Once thick, remove from heat and add parmesan and yogurt. Season with salt, pepper, and the red pepper flakes.

● Add your pasta and ¼ cup of your pasta water to the sauce and toss to combine. Add more water if the sauce is too thick until desired consistency.

● Garnish with chopped parsley.
