Gluten Free Chocolate Peanut Butter Cookies

The perfect recipe to satisfy your chocolate chip cookie craving with some added protein.

Here’s what you’ll need:

  • 1 cup smooth peanut butter

  • 1/3 cup maple syrup or honey

  • 2 tsp vanilla extract

  • 1 egg

  • 1/2 cup oat flour

  • 1/2 tsp baking soda

  • 1/2 tsp salt

  • 100 g chopped dark chocolate

Here’s what to do:

  • Preheat your oven to 180 Celsius

  • In a food processor add all the ingredients and blend until smooth

  • Stir in the chocolate

  • On a lined baking sheet use a table spoon and add the batter leaving at least one inch between each cookie

  • These cookies will not spread much so press down gently to flatten them slightly

  • Bake for 12 minutes until edges look golden brown

  • Let cool for 10 min and enjoy!
