What You Need:
½ cup of olive oil (125ml)
4 tablespoons of unsalted butter
2 eschalot onions, finely chopped
4 garlic cloves, finely chopped
2 red chilies, finely chopped
400g spanner crab meat
1 lemon, squeezed for juice
1 cup of parsley, finely chopped
2 teaspoons of chili flakes
Cook the linguine in water until soft. Once cooked, drain, leaving over half a cup of the cooking water.
While your linguine cooks, heat your olive oil & butter in a large frying pan and cook your onions, garlic and red chilies until slightly soft. Add the cooked linguine and reserved water to this and toss together.
Add the crab meat. Gently add the lemon juice as you stir. Lastly, add half of the parsley and season to taste.
Once cooked, serve in bowls and sprinkle the remaining parsley, chilli flakes and freshly ground black pepper.
Dinner has been served.
